Tomato and Mascarpone Soup

 This delicious Tomato and Mascarpone Soup is smooth and has a great consistency. It is so aromatic, filling and flavorful with every bite. Follow this recipe and cook a simple, classic dish.

  • Ingredients

    • 2 X 400g Can Of Chopped Tomatoes
    • 2 Teaspoons Honey
    • 250ml Vegetable Stock
    • 1 Teaspoon Of Tabasco Sauce
    • 1 Teaspoon Of Worcestershire Sauce
    • Salt And Freshly Ground Black Pepper
    • 4 Tablespoons Mascarpone
  • Method

    • Put the tomatoes, honey, stock, tabasco and Worcestershire sauce in a pot. Season with salt and freshly ground black pepper.

    • Bring to the boil and then reduce to a simmer for about 5 minutes.

    • Stir in the mascarpone and blend with a hand stick blender or in a blender to a smooth soup.

    • Add more boiling water if the consistency is too thick.

    • Return to the pot again and heat until it just comes to the boil and serve.
