Courgettes are incredibly easy to grow at home, bearing plenty of delicious crops that are perfect for many summer dishes. Conor’s simple vegetable pickles is a great way to celebrate this versatile vegetable. Made with tangy apple cider vinegar, fragrant mustard seeds and spicy chilli flakes, this is the perfect addition to salads and BBQs.

  • Ingredients

    • 225g courgettes (you can use any vegetable in this recipe)
    • 2 red onions
    • 500ml apple cider vinegar
    • 150g caster sugar
    • 30g sea salt
    • 15g chilli flakes
    • 10g whole mustard seeds
  • Method

    • Wash your courgettes, dry and slice in your Kenwood blender, peel your onions and slice
    • Place the vinegar, salt, mustard seeds and sugar in a saucepan and bring it to a boil.
    • Remove the pickling sauce from the heat and let it cool down.
    • Place the courgette and onions in a large Kilner jar, then pour in the pickling sauce.
    • Close the lid and give it a shake.
    • Leave for 3 weeks in your kitchen or cupboard, then refrigerate.
