Conor’s awesome recipe for vegan mayo is the perfect condiment for chips, plant based burgers and sausages. Who said being vegan meant missing out on mayo!

  • Ingredients

    • 4 tbsp aquafaba (brine/water from a can of chickpeas)
    • 2 tsp English mustard
    • Pinch of sea salt
    • 2 tbsp white wine vinegar or your own cultured vinegar
    • 250ml vegetable oil
  • Method

    • Using the kenwood blender attachment or stick blender – place all the ingredients, except the oil into the blender or jug for the stick blender. Blend for 20 seconds, then keep blending and slowly add the oil until thick and creamy…
