Nachos recipe

  • Ingredients

    Beef mince

    • 300-500g beef mice (depending on how much mince you like)
    • 1 large white or red onion
    • 4 cloves of garlic
    • Drizzle of olive oil
    • 1 tsp Paprika
    • ½ tsp chilli powder
    • 1 tsp Garlic powder
    • ½ tsp Salt
    • Few crack of black Pepper
    • ½ tsp Thyme (fresh or dried)
    • ½ tsp Parsley (dried or fresh)
    • 1tbsp butter (unsalted or salted)

    Nacho cheese

    • 60g Cheddar cheese
    • 60g Red leister
    • Whole milk (approximately 300ml)
    • 1 tbsp butter
    • 1 tbsp plain flour
    • Large pinch of: paprika, black pepper, chilli powder, garlic powder

    Salsa

    • ¼ red onion
    • 1 small garlic clove 
    • 3 large tomatoes (2 of which deseeded)
    • Hand full of parsley
    • Dried or fresh thyme and basil to your liking
    • Large pinch of salt – more if necessary
    • Pinch of black pepper
    • Pinch of garlic powder 
    • Pinch of paprika
    • Half a deseeded red chilli -optional

    Guacamole

    • 1 ripe avocado
    • ¼ finely diced red onion
    • 1 deseeded green chilli -optional
    • 1 handful of parsley
    • Large pinch of salt
    • Juice of 1 lime
    • Large pinch of pepper

    Toppings

    • Grated Cheddar cheese
    • Grated dry mozzarella
    • Jar jalapeños
    • Chopped tomatoes
    • 1-2 packs of tortilla chips
  • 1. Mice beef
    Start of by heating a pan of your choice to medium high heat. Once hot drizzle in olive oil and add diced onion to pan; cook until golden brown, then add in diced garlic and cook for 30 seconds. Next add mice beef to the pan and cook until deep brown. After that add listed seasoning as well as butter, stir till combined.

    2. Nacho cheese
    In a small pan melt butter on a low heat, once melted add flour till reaches a thick consistency. Cook on low heat while stirring occasionally for 2 minutes. Next add milk starting with small too big amounts stirring after each addition (only begin adding larger amounts of milk when mixture no longer looks like a paste)stop adding milk once it resembles consistency of condensed milk. Now that the milk has been added add in the cheese and seasoning then mix till fully melted.

    3. Salsa
    Add everything to Kenwood mini foodProcessor and pulse until desired consistency.

    4. Guacamole
    Peel and remove seed from avocado, begin mashing with a fork once mashed add diced onion parsley and freshly squeezed lime juice along with rest of ingredients. Mix till combined.

    5. Assembly
    Into a medium size dish or tray sprinkle half the pack of tortilla chip. Over the top sprinkle cheeses, jalapeños and mince. After that add remaining tortilla chips and top only adding beef and cheeses. Bake in the over for 5 minutes until the cheese it fully melted. Once baked add remaining beef, jalapeños and tomatoes on top. Then drizzle over desired amount of nacho cheese, salsa and guacamole. Now enjoy !
