Nutella Cupcakes

by Rob Baker

50 mins
Suitable for beginners
  • Ingredients

    For the cupcakes

    • 175g slightly salted butter
    • 175g caster sugar
    • 3 large eggs
    • 140g self-raising flour
    • 35g cocoa powder
    • 1tsp baking powder

    For the buttercream

    • 150g Nutella
    • 50g slightly salted butter
    • 300g icing sugar
    • 1-2tbsp water

    To fill/decorate

    • more Nutella
    • chopped hazelnuts
  • 1. Start by preheat ting your oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with large cupcake cases.

    2. In the bowl of your stand mixer, cream together your butter and sugar until light, fluffy and pale in colour.

    3. In a separate jug, whisk your eggs and gradually add these to the butter/sugar mixture, mixing on a low speed until fully combined.

Top Tip: If the mixture looks like it may be splitting or curdling, add a heaped tablespoon of your flour to bind it back together.

    4. Sieve the flour and cocoa powder into the bowl and mix until just combined – be careful not to over-beat the mixture.

    5. Divide the mixture between your cases and bake at the top of the oven for 25-27 minutes (until the mixture stops ‘singing’).

    6. Remove from the tin and place on a wire rack to cool completely.

    7. While your cakes are cooling, make the buttercream. Begin by creaming your butter in the bowl of a stand mixer until pale and smooth. This may take a while, but the longer you leave it, the better.

    8. Add in the icing sugar, a little at a time, ensuring each addition is fully incorporated before adding the next.

    9. Finally, add the Nutella and the milk, and mix again until smooth.

    10. Use a cupcake corer or a sharp knife to hollow out the centre of your cupcakes, and spoon or a pipe some of the extra Nutella into the space you have created.

    12. Transfer your buttercream into a piping bag, fitted with a closed star tip and pipe a generous swirl of buttercream onto each cupcake, before sprinkling with some chopped hazelnuts.

Chocolate and hazelnuts might just be one of the best combinations every created… which explains why so many of us go absolutely ‘nuts’ for Nutella. See what we did there…? But what’s even better than a big ol’ scoop of Nutella? Well, how about one of Mr Baker’s new Nutella Cupcakes? A deliciously light chocolate sponge, a secret hidden filling of pure unadulterated Nutella-y goodness, a Nutella- infused buttercream and all topped off with a sprinkle of chopped roasted hazelnuts.

We promise you… these really ARE as good as they sound, so make sure you give them a go and don’t forget to share a photo of your finished cupcakes with us right here in the Kids Club!
