1. Place the raspberries in a small, deep-sided pan and crush them with a wooden spoon.
2. Add the sugar and bring the liquid to the boil over a low heat until the sugar dissolves and the mixture is just starting to bubble.
3. Increase to a medium heat and boil for 4 minutes.
4. Remove the pan from the heat and pour the jam mixture into a large shallow pan, before leaving to cool to room temperature.
5. For seedless jam, simply pass the mixture through a fine mesh sieve, before discarding the seeds and leaving the jam to set.
Tomorrow is Jam Day so it’s the perfect time for Mr Baker to show us how to make his Simple Raspberry Jam that he uses to fill many of his highly decorated cakes – as well as enjoying it on toast, as part of an afternoon tea, in jam tarts… well, anywhere you might want to enjoy some jam.
