Ready in as little as 30 minutes, Kwanghi’s delicious teriyaki chicken skewers are perfect for lunchboxes or as part of your alfresco spread.

  • Ingredients

    For the teriyaki chicken skewers:
    • 500g ground chicken
    • 60ml soy sauce
    • 60ml sake
    • 60ml mirin
    • 20g sugar
    • 2 garlic cloves, peeled
    • 20g fresh ginger, peeled and chopped
    • 2g black pepper
    • 8 bamboo skewers, soaked in water for 30 minutes
  • Method

    For the teriyaki chicken skewers:
    • Preheat your grill or broiler to medium-high heat.
    • In a food processor, combine the ground chicken, soy sauce, sake, mirin, sugar, garlic, ginger, and black pepper. Pulse until well combined and the chicken mixture becomes smooth and homogenous.
    • Divide the chicken mixture into 8 equal portions. Mould each portion around a skewer into an elongated shape, like a sausage.
    • Grill or broil the skewers for 8-10 minutes, turning occasionally, or until the chicken is cooked through and slightly charred.
    • Serve the skewers hot, garnished with sliced green onions or sesame seeds, if desired.
