Chicken Burgers with Coriander and Lime Mayo

  • Chicken Burgers with Coriander and Lime Mayo


    For the burgers patties:
    • 3 large chicken breasts
    • 3 scallions
    • 3 cloves garlic
    • 1 red onion
    • Handful fresh coriander
    • Handful bread crumbs
    • Drizzle of oil
    • 1 tsp salt
    • ½ tsp black pepper
    • Zest from 1 lime
    To serve:
    • 250g mayonnaise
    • Juice from 1 lime
    • Small bunch of fresh coriander, roughly chopped
    • Salt & pepper
    • 4 burger buns
  • Method

    • Blend together the burger patty ingredients in your Kenwood food processor until ingredients have combined.
    • Coat your hands with a bit of olive oil, then shape the burger mixture into 4 burger patties.
    • Drizzle patties with a bit of oil, then grill over medium heat until cooked through, 6-8 minutes on each side.
    • While patties are cooking, mix together mayonnaise, lime juice, coriander, salt and pepper in a small bowl. Set aside until needed.
    • Serve burgers on toasted burger buns generously topped with coriander and lime mayo and shredded iceberg lettuce.
