  • Ingredients

    For the Marinade:
    • 1 Large Onion, Peeled & Quartered
    • 3 Spring Onions, Ends Trimmed
    • 3 Cloves Garlic, Peeled
    • 50g Fresh Ginger, Peeled
    • 100ml Dark Soy Sauce
    • 2 Tbsp Coconut Sugar Or Brown Sugar
    • 1 Tbsp Ground Allspice
    • 1 Tsp Fresh Thyme Leaves
    • 1 Scotch Bonnet Pepper(Chef Notes)
  • Method

    • To make the marinade, blend all marinade ingredients in a food processor until mostly smooth.
    • Place pork chops in a large shallow dish and pour half of the marinade over the meat. Spread all over the chops then turn over and spread remaining marinade over. Cover and leave to marinade in the fridge for at least 2 hours, better yet, 24-48 hours.
    • When ready to cook, leave pork chops at room temperature for about 30 minutes to lose their chill. Grill in the oven set to medium heat for about 30 minutes, or if cooking on a barbeque, cook for about 6 minutes on each side
  • Chef Notes

    • You can also use habaneros or regular red chillis.
