Fluffy Pancakes

Nothing quite beats the smell of pancakes in the morning (or at any time of the day really)...why not treat a loved one to a lazy Sunday morning breakfast in bed or have a great time with the kids while preparing them? These vegan pancakes are light, fluffy and utterly perfect for such a moring!

  • Ingredients

      For the dry mix:
    • 250g Plain Flour or Gluten free plain flour
    • 70g Cornflour
    • 200g Soft brown sugar
    • 25g Baking powder
    • 70g Caster sugar
    • 250g Plain flour
      For the wet mix:
    • 25g Aqua Faba - (Liquid from a tin of chickpeas)
    • 1 tsp Apple cider vinegar
    • 50g Sunflower oil
    • 70g Soya milk
    • 1 tsp Vanilla extract
      Special Equipment:
    • Kenwood Chef Titanium with dough hook
  • Method

    • First add all the dry ingredients to the bowl of a Kenwood chef.
    • Next add all of the wet ingredients.
    • Using the whisk attachment, whisk the ingredients together at a slow speed until a smooth batter is achieved.
    • Heat a frying pan on a medium heat with a little neutral oil. Using a large spoon or a ladle, pour pancakes into pan and cook for a few minutes. Flip to other side and cook for a few minutes until golden brown.
