Super Goey Brownies

If you can never have enough of chocolate, you are on the right place. These chocolate brownies are fudgy, gooey and super easy to make. The perfect vegan chocolate treat for anytime!

  • Ingredients

    For the dry mix:
    • 400g Plain flour or Gluten Free Plain Flour
    • 90g Cocoa
    • 450g Caster sugar
    • 150g Soft brown sugar
    • 1/2 tsp Xanthan gum
    • 1 tsp Baking powder
    • 1tsp Salt
    • Choc Chips for topping
    For the wet mix:
    • 375g Neutral oil such as corn oil or sunflower
    • 200g Soya milk
    • 150g Cold water
    • 1 tsp Vanilla extract
    For the flax egg:
    • 3 tbsp Ground flax seeds
    • 9 tbsp Warm water
  • Method

    • Mix together the flax egg in a small container or cup. Set aside.
    • Using a Kenwood chef, add together all the dry ingredients into the large bowl. Using the K beater attachment mix the dry ingredients well.
    • Combine all wet ingredients in a large jug.
    • Add the wet ingredients and the flax egg to the dry mix and mix throughly and quickly on setting 2. A few lumps are ok.
    • Pour mixture into a deep baking dish lined with parchment. Sprinkle with chocolate chips and bake at180C for approx. 45 minutes. Allow to cool completely before removing from tin.
