Watercress and Parsley Soup

The Watercress and Parsley Soup is a beautiful colour of green, and is aesthetically pleasing and satisfies the satiety value. It is made with simple ingredients, that combine together to make this awesome dish. Try this recipe to prepare a healthy delicious soup in minutes.

  • Ingredients

    • 3x Cloves of Garlic
    • 1x Onion
    • 125g Unsalted Butter
    • 400g Whole Milk
    • 200g Double Cream
    • 500g Chicken Stock
    • 500g Watercress, stems removed
    • 100g Parsley, stems removed
  • Method

    • Peel the onion and garlic cloves, thinly slice and place into the bowl alone with the butter and a generous pinch of salt.
    • Close the lid and set the machine to 95°C mixing speed 2 for 5 minutes until the onions are soft and translucent.
    • Pour the chicken stock, milk and cream into the bowl. With the machine on mixing speed 2, set the heat to 120°C and bring the mixture to the boil.
    • Once boiling, stop the machine and open the lid and add the herbs to the bowl. Close the lid and set the heat to 95°C on
      mixing speed 2 for 3 further minutes to cook the herbs.
    • Now blend the soup on full speed for 2 minutes, open the lid and pass through a sieve into a bowl over ice.
    • Season the soup with salt and pepper and serve immediately with a spoon of crème fraîche.
